How To Make Crunchy Granola:
Ingredients
2 cups oats, I use this brand of gluten-free from Amazon
1 cup coconut flakes
1 cup sliced almonds
1/4 cup ground flaxseed
3 Tbsp coconut sugar
1 tsp cinnamon
1/2 tsp salt
1/2 cup coconut oil
1/2 cup honey
1 tsp vanilla
1/4 cup bee pollen, I use this brand from Amazon
1/4 cup cacao nibs
Instructions
Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
In a large bowl, combine oats, coconut flakes, sliced almonds, ground flaxseed, coconut sugar, cinnamon, and salt.
In a saucepan, melt together coconut oil, honey, and vanilla over low heat until well combined.
Pour the liquid mixture over the oat mixture and stir until everything is evenly coated.
Spread the granola mixture onto the prepared baking sheet in an even layer.
Bake for about 25-30 minutes, tossing halfway through, until the granola is golden brown and crisp.
Remove from the oven.
Sprinkle bee pollen and cacao nibs over the granola. Place a new piece of parchment paper on top of the granola and press lightly to combine the new ingredients. Let cool and store in an air-tight container for up to two weeks. I store mine in the fridge just to be safe.
