Crunchy Bee Pollen Granola Recipe

Craving a little sweet and crunch? Almost every day I get an afternoon snack craving. This granola combined with my homemade cashew milk is the perfect nutritious snack to keep you fuller longer while indulging in a little sweetness.

How To Make Crunchy Granola:


Ingredients

  • 2 cups oats, I use this brand of gluten-free from Amazon

  • 1 cup coconut flakes

  • 1 cup sliced almonds

  • 1/4 cup ground flaxseed

  • 3 Tbsp coconut sugar

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1/2 cup coconut oil

  • 1/2 cup honey

  • 1 tsp vanilla

  • 1/4 cup bee pollen, I use this brand from Amazon

  • 1/4 cup cacao nibs


Instructions

  • Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

  • In a large bowl, combine oats, coconut flakes, sliced almonds, ground flaxseed, coconut sugar, cinnamon, and salt.

  • In a saucepan, melt together coconut oil, honey, and vanilla over low heat until well combined.

  • Pour the liquid mixture over the oat mixture and stir until everything is evenly coated.

  • Spread the granola mixture onto the prepared baking sheet in an even layer.

  • Bake for about 25-30 minutes, tossing halfway through, until the granola is golden brown and crisp.

  • Remove from the oven.

  • Sprinkle bee pollen and cacao nibs over the granola. Place a new piece of parchment paper on top of the granola and press lightly to combine the new ingredients. Let cool and store in an air-tight container for up to two weeks. I store mine in the fridge just to be safe.
